This simple yummy child-friendly cookie recipe is easy to make and a fun thing to do with the kids. Its also a great way to use up all those left over Easter eggs. Ingredients: 1 cup of plain flour 1 teaspoon bicarb of soda 150g butter, chopped 1/2 teaspoon vanilla essence 1 egg 1/2 cup caster sugar 1/2 cup brown sugar 1/2 cup shredded coconut 2 cups rolled oats 1 cup dried cranberries 1/2 cup chocolate bits Method: Step 1 Preheat oven to 160°C. Line 2 large baking trays with baking paper. Step 2 In a mixing bowl sift flour and bicarbonate of soda. Place butter in a microwave-safe bowl. Microwave on medium until butter has melted. Add butter, vanilla and egg. Stir to combine. Step 3 Add sugar, then coconut, oats, dried cranberries and chocolate. Stir to combine Step 4 Roll mixture into balls.
